Hello.!
I had began a blog back in March but life and all it's crazy busy-ness got in the way. I guess that's what happens when you're happy. :D
Let's see, well, I am coming up on my first year living in St. George... CRAZY! For a girl who swore she'd never leave Southern California, she definitely left... AND loves it. I do, I really do. Yes, the weather is extreme [considering I'm from perfect-weather-year-round Ventura County] I love St. George. There's only a handful of things I actually miss from SoCal and they are as follows: 1. My extended family and friends. 2. Disneyland 3. Weather 4. Coffee Bean [teas] 5. Ethnic Food 6. Shopping in Santa Monica & LA. Yes, I have Las Vegas down the street but it's not the same. HAHA.
I have a craving for spending and adventure all too often but since moving here I've come to learn to be frugal and practical. Now that I'm living in a MUCH smaller city of only 75,000 [compared to Oxnard's 201,000] I've learned that small town life is SO much better in many ways... especially for those who want to settle down and start a family. I've always been that girl, growing up Mormon, and dreaming of one day finding my eternal companion who will compliment me in my life as well as I him.(: Before I can begin to do that I had to find myself again and re-humble myself. The "lavish" California life had taken over me and I was all about dropping so much money on stuff that I didn't even NEED or could get at a much better price! My mom noticed I was watching KUWTK [which I haven't in almost a year] and told me that before I moved here I was them, snobby, and materialistic. OUCH. Looking back though, I see it, and it makes me even more determined to be the best person I can be and develop my skills in crafting, cooking, planning and being a better Child of God.
Back to the top of this post... "I guess that's what happens when you're happy." I so am! I have a fun job, I attend church every Sunday, I have two callings [Music director and Activity Days coordinator], I am preparing to serve a mission and I have my family with me. What else could I need in this developing stage? It's so crazy how much I've grown in the last couple of years and now am ready to begin the journey to the rest of my life.!
Enough jibber jabber, this is all it is... Gobble Gobble Gobble Gobble Gobble. I tend to talk a lot. haha.
I'll leave you with my most recent dish...Since there's only ONE Indian restaurant in St. George, and I wasn't too fond of it, i decided to make my own Indian food... SCARY!!
Nope, it was actually super easy... and DELICIOUS!

Cashew Chicken Curry
Ingredients:
Extra Virgin Olive Oil
4 Chicken Breasts [cut into small pieces]
Salt and Pepper
2 [diced] Yellow Onions
2 tbsp Curry Powder
2 tsp Garam Masala
1/2 cup Plain Yogurt [I used Greek]
1 13-ounce can Coconut Milk
1/2 cup Chicken Stock or Water
1/4 cup Cashews [can toast]
Basmati rice
Heat a pan oven with a few tablespoons of olive oil over medium.
Season chicken with salt and add to the pot. Cook until browned. Remove chicken
to a plate. Reduce heat to medium-low and add another tablespoon of oil as
needed to sauté onions. Season with salt and pepper and cook until translucent.
Add either your spice blends to the onions, and stir to combine.
Return the chicken to the pan along with yogurt, coconut milk and chicken
stock, stirring to combine. Bring to a boil and reduce to a simmer. Cook for 10
to15 minutes or until the chicken is cooked and the sauce has reduced by half.
